Ingredients:
– 2 lobsters (1 1/2 pounds each)
– 12 ounces pasta (such as fettuccine, linguine, or spaghetti)
– 1 tbsp Favored with Flavor Seafood seasoning
– 1 tsp smoked paprika
– 2 tbsp olive oil, divided
– 2 tbsp butter, divided
-1 shallot, diced
– 4 cloves garlic, minced
– 1 cup sundried cherry tomatoes, halved
-1 cup of fresh spinach
– 1/2 cup dry white wine or chicken broth
– 1 cup heavy cream
– 1/2 cup grated Parmesan cheese
– 1 tablespoon lemon juice
– 2 tablespoons chopped fresh parsley
– Salt and pepper to taste
– Optional: red pepper flakes for a bit of heat
Instructions:
1. Cook the Lobsters:
– Remove the lobster meat from the shells. Keep the shells as we will cook with those.
-Chop the lobster meat into bite size pieces.
-Season the lobster with seafood seasoning and salt.
-In a skillet heat 1 tbsp olive oil and 1 tbsp butter and then add the lobster. Cook for about 4 to 5 minutes and remove from skillet and set to the side.
2. Cook the Pasta:
– In the same pot, add the pasta and one of the lobster shells and cook pasta according to the package instructions until al dente. Drain and set aside.
3. Prepare the Sauce:
– In a large skillet, heat the olive oil and butter over medium heat.
– Add the shallots and minced garlic and cook until fragrant, about 1-2 minutes.
– Add the cherry tomatoes and spinach and cook until they begin to soften and the spinach cooks down, about 3-4 minutes.
– Pour in the white wine/chicken broth and add the other lobster shell and let it simmer for about 2-3 minutes until reduced by half.
– Stir in the heavy cream and bring the mixture to a gentle simmer. Cook for about 5 minutes until the sauce starts to thicken.
4. Combine Everything:
-Remove the lobster shells
– Add the cooked lobster meat to the sauce and gently stir to combine.
– Stir in the grated Parmesan cheese, lemon juice, and chopped parsley.
– Season with salt, pepper, smoked paprika and red pepper flakes if using.
– Add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the sauce.
5. Serve:
– Divide the lobster pasta among plates or bowls.
– Garnish with additional parsley and grated Parmesan cheese if desired.
